225g plain (all purpose) flour
110g butter
75g sugar
75g currants or raisins
1 teaspoon baking powder
1⁄4 teaspoon mixed spice
pinch of salt
1 tablespoon milk
1 egg
1. Sift the flour, baking powder, mixed spice and salt together.
2. Rub in the butter until the mixture is like breadcrumbs.
3. Add the sugar and currants or raisins.
4. Beat the egg in a separate bowl and add to the dry mix, along with just enough milk to make a firm dough.
5. Roll the dough onto a floured board to a thickness of 1⁄2 inch and cut out
circles (use a cookie cutter).
6. Grease a bake stone (an alternative would be a chapati pan - anything heavy and flat). Cook over a gentle heat for about 2-3 minutes each side or until golden brown.
7. Cool on a rack and sprinkle with sugar.
