For the crépes:
100g all purpose flour
1 egg
50ml milk
5g sugar
3g salt
1 teaspoon vanilla essence
For the filling:
10g of dark chocolate, grated 10g of white chocolate, grated
For the pineapple fries: 10g pineapple
10g brown sugar
rice flour for dusting 5g cinnamon powder oil for frying
For the chocolate sauce: 100g dark chocolate 20ml milk
20ml cream
10ml clarified butter
METHOD:
In a mixing bowl add the egg and sugar, mix until the sugar is dissolved completely. Add the flour and mix it in, then the milk, salt and the vanilla essence. Whisk until the batter is smooth - it should be thinner than a pancake batter.
Pour one ounce of the batter into the centre of a large pan brushed with oil or crépe machine and swirl to spread the mixture evenly. Cook for 30 seconds, then flip the crépe and cook for another 10 seconds. Remove the crépe to a cutting board.
To make the hot chocolate sauce, place all of the sauce ingredients in a double boiler, and melt over a gentle heat.
To make the pineapple fries, cut the pineapple as if you were making french fries, then coat the sticks with brown sugar. Dust with a little rice flour, and fry until they are golden and crispy. Sprinkle with the cinnamon powder and serve with the hot chocolate sauce.
Put the grated dark and white chocolate on the crépe and roll it.
Serve warm with ice cream, chocolate sauce and pineapple fries.
